Alligator Bites

This tasty dish is probably one of the most unique recipes on the blog! I remember in my younger days there was a cajun restaurant in Portland called Montage that used to serve up alligator! I have always been an adventurous eater and enjoyed it there many times but have yet to see it anywhere else.

I was very excited to see that Wild Fork Foods has some unique meats including Alligator and its a great protein. It has a very unique taste and texture and pairs great with my cajun sauce.

Cook Time: 10 minutes


Ingredients

24 ounces coconut oil , for frying 
1 lb Alligator Tenderloins
1 cup (140 g) Ottos Cassava Flour 
1 tablespoon garlic powder 
1 tablespoon onion powder
1 teaspoon sea salt 
¼ teaspoon baking soda 
1 large egg 
½ cup (120 mL) sparkling water 
1 batch of Cajun Sauce


Directions

1. Over medium heat, heat the oil in a stovetop deep fryer.

2. Blot the alligator until it's dry, chop into bite size pieces and set aside. (Code TRAIL gets you 10% off Nakano Knives).

3. In a stand mixer or large bowl, combine the cassava flour, garlic, onion, salt, and baking soda and stir together. 

4. Mix in the egg and sparkling water until fully combined. 

5. Dip each piece of alligator into the batter and fully coat and then place into the fryer, being careful to not overfill or they will stick. 

6. Fry until golden brown (about 2-3 minutes) and place on a plate with a paper towel to dry. 

7. Serve with  Cajun Sauce or Tartar Sauce.
