Avocado & Salmon TAP NYC Wrap

Tap NYC is one of my favorite NYC restaurants and I stop in at least once on every visit to NYC. 

They features dishes with its delicious Brazilian tapioca wraps that are perfect for gluten-free diets. While it would be impossible to eat there every day unless you live in NYC, the restaurant sells a tapioca flour mix that you can turn into the wraps at home. The best part about this mix is that you don’t need any extra ingredients. In fact, all you have to do is simply empty it into a skillet and cook it through to create a perfect wrap that is great for both sweet and savory preparations.

This Avocado & Salmon TAP NYC Wrap includes a smooth guacamole-type mixture with smoked salmon slices. This would be particularly great for breakfast, but feel free to have it for lunch paired with a tossed green salad too.


Servings: 1 wrap
Prep Time: 10 minutes
Cook Time: 5 minutes


Ingredients

1 ripe avocado
Lime juice and salt, to taste
½ cup Tap NYC tapioca flour (you can email them or DM them on Instagram to order)
A few slices of smoked salmon


Directions

1. In a small bowl, mash the avocado and season with the lime and salt to taste.

2. Heat a non-stick skillet set over high heat. Add the tapioca flour, spread evenly, and cook for 3 minutes.

3. Add the avocado and smoked salmon on one side of the wrap, fold, and cook over medium heat the tapioca crepe is cooked through. Serve immediately.
