Pesto & Tomato TAP NYC Wrap

Tap NYC is one of my favorite NYC restaurants and I stop in at least once on every visit to NYC. 

Unfortunately, so many of us are not fortunate enough to live near one of its locations, but it is relatively easy to make the restaurant’s wraps at home. In fact, it sells its own tapioca flour mix online that you can obtain contacting the restaurant via email or direct messaging on Instagram.

This tapioca mix is excellent because you don’t require any other ingredients. It doesn’t even need to be mixed. All you do is dump the flour mixture into a non-stick skillet and cook it to crepe-like perfection.

This version of a TAP NYC wrap is filled with basil, pesto, and mozzarella cheese for a Caprese salad-inspired combo. Fresh homemade pesto and local, in-season tomatoes will be the best choice for this wrap do to its overall simplicity.


Servings: 1 wrap
Prep Time: 10 minutes
Cook Time: 5 minutes


Ingredients

½ cup of Tap NYC tapioca flour (you can email them or DM them on Instagram to order)
1 batch of my fresh basil pesto
1 tomato, sliced
Mozzarella cheese or vegan cheese of choice


Directions

1. Heat a non-stick skillet set over high heat. Add the tapioca flour, spread evenly, and cook for 3 minutes.

2. Add the basil pesto, tomato, and cheese to one side of the wrap, and fold and cook over medium heat until the cheese is melted. Serve immediately.
