Blueberry Chia Parfait

Chia seeds are excellent when trying to create a healthy dessert or breakfast because they are fiber-rich and nutritious, and thicken a pudding without the need for starches. Consider pre-assembling several of these and leaving them in the fridge for when you need a quick sweet treat or breakfast.

Prep Time: 15 minutes
Cook Time: 15 minutes + soaking time


Ingredients

¼ cup chia seeds or 2 packs per parfait of Just About Foods Organic Chia Seeds (code TRAILTOHEALTH for 15% off)
1 cup almond or coconut milk 
½ cup fresh blueberries, divided 
5 oz. coconut yogurt, such as Coyo brand coconut yogurt 
4 fresh mint leaves


Directions

1. Mix the chia seeds with the almond milk or coconut milk in a bowl or jar. Let it sit for 30 minutes until the seeds expand in the liquid. 

2. To assemble 2 parfaits, create a base of the chia mixture at the bottom of 2 jars or parfait glasses. Top with half of the blueberries followed by a layer of coconut yogurt. Top with the remaining blueberries.

3. Garnish each parfait with 2 mint leaves and enjoy.
