Celery Root Hush Puppies

Celery root is a very underrated vegetable and is a fantastic low carb alternative to potatoes or sweet potatoes. These celery root hush puppies are a fantastic flavor combo of bacon, mushrooms and herbs with the fluffy celery root texture.

Ingredients

1 lb Celery Root Mash (about 3 celery roots) 
1 pack (8 ounces) of bacon, cooked (Order grass-fed meat from Butcher Box (discount varies) or US Wellness Meats (15% off first 2 orders) with code TRAILTOHEALTH)
1 tablespoon butter or coconut oil 
1 cup  of white mushrooms, sautéed use code TRAILTOHEALTH for 50% off your first box
1 teaspoon garlic powder 
1 teaspoon onion powder 
2 tablespoons fresh chives 
1 teaspoon sea salt
½ cup cassava flour 
1 egg beaten 
24oz of coconut oil  for deep frying 


Directions

1. Start by making the Celery Root Mash . This can be done with my Instant pot recipe or you can make it stove top. If making stove top, heat a large pot over high heat, and bring water to a boil. Place the peeled and cubed celery root in the pot and boil until soft, about 20-30 minutes. (use code TRAILTOHEALTH for $10 off your Instant Pot).

2. While the celery root boils, cook one pack of bacon over medium heat and let it drain on a paper towel covered plate. Once cooled crumple or chop into bite size pieces. (Code TRAIL gets you 10% off Nakano Knives).

3. Once the celery root is done cooking (should be fork tender), strain them and mash them in the pot while warm. You can use an immersion blender to get them smooth. Set aside 1 pound (about 2 ½ cups) of the mash for the recipe. 

4. In a skillet over medium, heat the butter or coconut oil and sauté the chopped mushrooms.

5. In a large bowl with the mashed celery root, add garlic, onion, salt and chives and stir to combine. 

6. Stir in the chopped bacon and sautéed mushrooms. 

7. Stir in the egg and cassava flour.

8. Use your hands to fully combine the mixture and start to form into ball shapes (about 1 to 1 ½ inches in diameter, about golf ball size).

9. Set aside on a plate and heat the oil in a stove top deep fryer over medium heat.

10. Once the oil is hot place a few hush puppies in the fryer oil and fry until golden brown (about 4 - 5 minutes)

11. Let them rest on a paper towel-covered dish to remove excess oil.
