Chimichurri Chicken

Delicate tasting chicken becomes super flavorful by being marinated in a bright and herbacious sauce. Classic chimichurri sauces are dominated by parsley and this one is no different. A healthy blend of lemon and additional herbs give the sauce nuance and make it perfect to drizzle over everything. Use it on any meat you plan to grill, such as pork or beef too.

Cook Time: 8-10 minutes


Ingredients

CHIMICHURRI SAUCE
1 bunch fresh parsley
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh thyme
1 cup Kasandrinos olive oil (use code TRAILTOHEALTH for 10% off)
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon salt
Juice of 1 lemon
Zest of 1 lemon


Directions

1. For the chimichurri sauce, remove the parsley leaves from the stems and place the leaves in a food processor. Add the oregano, rosemary and thyme, and pulse until finely chopped.

2. Once chopped, remove the herbs to a large bowl and stir in the olive oil, garlic powder, onion powder, salt, lemon juice and lemon zest.

3. Place the chicken in a large rectangular container and pour half of the chimichurri sauce on top; marinate in the fridge for at least 30 minutes or overnight.

4. Save the remaining sauce to serve with the cooked chicken.

5. Remove the chicken from the marinade. Grill over medium heat for 4-5 minutes per side or until the chicken is cooked through.

6. Serve with the remaining chimichurri sauce and grilled skewered tomatoes or zucchini, or other veggies of choice.
