Easy Coconut Milk

Did you know it is extremely easy to make your own coconut milk at home? Most store bought coconut milks have guar gum in them and it can cause digestive issues. It definitely does for me so making my own coconut milk is a must.

There are a few must haves to make coconut milk at home. First you need a high speed blender, like a Vitamix and you need a quality nut bag. I hands down LOVE my Ellies Best Nut Bag and I have tried a lot of different ones. You can even use code TRAILTOHEALTH for 10% off!

I like to soak my coconut in my blender for about 30min before I blend it. It helps to soften the coconut and get more milk out of it.

After you blend on high for about 3 minutes comes the fun part of straining the milk through your Nut Bag. I like to use a large bowl and squeeze all the milk out of the bag. You will be left with coconut that resembles coconut flour. You can actually dry it out and use it as coconut flour if you wanted to!

You can store your coconut milk in a glass mason jar in the fridge for a few days. Make sure to shake it well before use as the fats do separate when chilled.

Ingredients

2 cups shredded unsweetened coconut
3-4 cups water 


Directions

1. Add the coconut and 3 cups of the water to a high speed blender, like a Vitamix.

2. Let it soak for about 30 minutes.

3. Blend on high for 2-3 minutes until creamy.
NOTE: If you want thinner milk, add another 1/2 - 1 cup of water.

5. Enjoy immediately and store any remaining milk in a glass jar / container in the refrigerator.

6. Shake before use as it can separate when chilled.
