Grain Free Lasagna

This easy lasagna recipe has all the taste and texture of classic lasagna, but without the flour-laden noodles. Instead, this pasta uses Cappello’s almond flour lasagna sheets which are very similar to traditional pasta. Consider assembling a few of these and popping in the freezer to have whenever you are in the mood for a hearty, warming plate of cheesy lasagna.

Ingredients

MEAT FILLING
1 tablespoon avocado oil (use code TRAILTOHEALTH for 10% off)
1 lb ground beef (Order grass-fed meat from Butcher Box (discount varies) or US Wellness Meats (15% off first 2 orders) with code TRAILTOHEALTH)
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
1 teaspoon salt
1 jar of Primal Kitchen Garlic Pasta Sauce (Use code TRAILTOHEALTH for 10% off)
½ cup sliced black olives

CHEESE FILLING
2 eggs
1 lb shredded mozzarella, divided
1 lb ricotta cheese
1 tablespoon chopped fresh oregano
1 tablespoon fresh basil
1 teaspoon salt
1 package Cappello’s Almond Flour Lasagna


Directions

1. Preheat the oven to 350 F (177 C).

2. For the meat filling, heat the avocado oil in a saucepan set over medium heat.

3. Add ground beef, garlic powder, onion powder, oregano, basil, and salt, and cook until browned.

4. Stir in the pasta sauce and bring to a simmer. Stir in the black olives and set aside.

5. For the cheese filling, in a separate bowl, beat the eggs. Stir in half the mozzarella, the ricotta, oregano, basil, and salt until combined.

6. For assembly, using a rectangular 9 x 12-inch (23 x 30-cm) baking pan, ladle a layer of the meat mixture. Lay a layer of lasagna sheets and spread ½ of the cheese layer on top. Sprinkle some of the unused mozzarella before repeating to create another lasagna layer.

7. Next, spread the last of the meat mixture on top and sprinkle with more cheese. Top with the last of the lasagna sheets and then sprinkle with the remaining mozzarella.

8. Cover with foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for another 10 to 15 minutes to get the top layer of cheese crispy.

9. Remove from the oven and slice once cooled slightly.

10. Serve with a side of arugula or any kind of salad.
