Lemon Poppyseed Bundt Cake

Bundt cake is a classic ring-style cake that is great for serving to large crowds or having on hand when guests come over. This recipe is full of bright, tart lemons, to give it a flavorful fruity taste. Ingredients

CAKE
¾ cup butter or coconut oil 
½  cup maple sugar 
1 teaspoon vanilla extract 
1 tablespoon lemon extract 
2 tablespoons lemon juice 
1 tablespoon lemon zest 
4 eggs 
2 cups Beths Blend Grain Free Flour (use code TRAILTOHEALTH for 10% off)
¼ teaspoon salt 
3 tablespoons poppy seeds (use code TRAILTOHEALTH for 15% off)
1 cup coconut milk 

GLAZE
½ cup coconut butter, melted
3 tablespoons coconut milk
3 tablespoons maple syrup or honey 
1 teaspoon vanilla extract 
1 tablespoon lemon extract 
water as needed, I used about ¼ cup adding 1 tablespoon at a time


Directions

1. Preheat your oven to 350 and grease a Bundt Cake pan with grass fed butter or coconut oil.

2. In a stand mixer, combine the coconut oil or butter with the maple sugar.  

3. Add in the vanilla extract, lemon juice, lemon zest,  lemon extract and poppy seeds and mix well.

4. Beat in the eggs, one at a time until fully combined.

5. Start to add the flour into the stand mixer and combine fully. Next add in the coconut milk.

6. Pour batter into greased pan

7. Bake for 25-30 min until a cake tester comes out clean.

8. While the cake is cooling in the bundt pan you can start to make the glaze. Whisk the coconut butter with the milk, maple syrup (or honey) and vanilla in a small bowl. Slowly add water until the right consistency is achieved.

9. Once the cake is cooled, use a cake stand on the bottom of the bunt cake pan and quickly flip it to remove it from the pan.

10. Let the cake cool about 10 more minutes before drizzling on the glaze.
