I decided to put it to the test with this Greek Bowl that was made all at the same time in one pot and I am blown away. The lower layer has a bed of greek rice with dill, then in the center rack we steam our lemon garlic cauliflower and last but not least our chicken steams and crisps perfectly on the top rack brining this meal together in just 20 minutes.

Ingredients

RICE LAYER - Bottom
1 cup rice
2 cups water
1 tablespoon olive oil use code TRAILTOHEALTH for 10% off
¼ cup fresh dill, chopped
2 tablespoons fresh lemon juice 

CAULIFLOWER LAYER - Middle
2 cups cauliflower florets use code TRAILTOHEALTH for 50% off your first box

2 tablespoons fresh lemon juice
1 teaspoon garlic powder
1 teaspoon sea salt

CHICKEN LAYER - Top
2 chicken breasts
2 tablespoons olive oil (use code TRAILTOHEALTH for 10% off)
2 tablespoons Greek Seasoning 
1 teaspoon garlic powder
1 teaspoon sea salt

LEMON TAHINI
½ cup tahini
juice of 2 lemons
3 tbsp olive oil (use code TRAILTOHEALTH for 10% off)
1 garlic clove, minced or 1 tablespoon garlic powder
1 tsp salt
Water, as needed to thin the dressing to desired consistency

FOR THE BOWLS 
½ cup cherry tomatoes - quartered
½  cup cucumber, sliced and halved
½  cup Kalamata Olives
Crumbled Feta, optional


Directions

1. Rinse the rice until it runs clear and place in the bottom of your Ninja Foodi XL Pot. Add the water, oil, dill and lemon and stir to combine.

2. In a medium bowl, combine olive oil, lemon, garlic and salt and then add cauliflower and toss until fully coated in the mixture.

3. Place the cauliflower in a sheet of aluminum foil and wrap into a sealed pocket. Place on the lower level of the deluxe reversible rack.

4. In a small bowl, combine the remaining oil, Greek seasoning, garlic powder and salt. Pat the chicken dry and then coat with the seasoned oil.

5. Place the chicken on the top layer of the rack and place into the Ninja Foodi.

6. Close the lid, slide the lever to Steam Crisp and set to 385F for 20min.

7. While your meal is cooking, prep your lemon tahini sauce by adding all ingredients into a food processor and thin with water to get the desired consistency. You can also whisk this in a bowl, but it will take some time to get the right consistency.

8. Once Steam Crisp is complete, carefully open the lid and remove the Deluxe Layer Rack. Slice the chicken into thin slices and set aside and remove the cauliflower from the foil wrap.

9. Assemble the bowl with a layer of dill rice, cauliflower, chicken  tomatoes, cucumbers and olives. Top with Feta if you desire.

10. Top with a drizzle if lemon tahini sauce and fresh dill if desired.
