Rosemary Roast Beef

Roast beef is the perfect weekend roast for a family. It is fast to prepare, takes only an hour or so in the oven, and can go with almost any side dishes that you choose, like mashed potatoes, cauliflower mash, or roasted vegetables. This version is scented with hearty rosemary, which can hold up well in the oven.


Servings: 4 to 6
Prep Time: 10 minutes
Cook Time: 40 to 60 minutes


Ingredients

2-3 lb roast beef  (Order grass-fed meat from Butcher Box (discount varies) or US Wellness Meats (15% off first 2 orders) with code TRAILTOHEALTH)
4 sprigs of rosemary, 2 finely chopped 
1 teaspoon garlic powder 
1 teaspoon salt 


Directions

1. Preheat the oven to 375 F (190 C).

2. Place the roast in a roasting pan and season with the two chopped rosemary sprigs, garlic powder, and salt. Add the remaining two rosemary sprigs to the pan.

3. Roast for 20 minutes per pound for a total of 40 to 60 minutes.

4. Once the internal temperature reaches 140 F (60 C), remove from the oven. Cover with foil and allow it to rest for 10 to 15 minutes before slicing. (Code TRAIL gets you 10% off Nakano Knives)
