Tuna Melt TAP NYC Wrap

Tap NYC is one of my favorite NYC restaurants and I stop in at least once on every visit to NYC.

TAP NYC features dishes with its delicious Brazilian tapioca wraps that are perfect for gluten-free diets. While it would be impossible to eat there every day unless you live in NYC, the restaurant sells a tapioca flour mix that you can turn into the wraps at home. The best part about this mix is that you don’t need any extra ingredients. In fact, all you have to do is simply empty it into a skillet and cook it through to create a perfect wrap that is great for both sweet and savory preparations.

This tuna melt is pretty classic in its mayo, tuna and cheese but the real twist comes from the grain-free tapioca wrap. This would be particularly great for and easy lunch paired with some sliced tomatoes.

Servings: 1 wrap
Prep Time: 10 minutes
Cook Time: 5 minutes

Ingredients

1 can of low mercury tuna
2-4 tablespoons of Mayo (Code TRAILTOHEALTH gives you 10% off)
Mustard to taste
Salt to taste
½ cup Tap NYC tapioca flour (you can email them or DM them on Instagram to order)
A few slices of cheese of choice (I used Cheddar)

Directions

1. In a small bowl, mix the mayo, tuna, mustard and salt to taste.

2. Heat a non-stick skillet set over high heat. Add the tapioca flour, spread evenly, and cook for 3 minutes.

3. Add the tuna mixture and cheese on one side of the wrap, fold, and cook over medium heat the tapioca crepe is cooked through. Serve immediately.
