Tuna Stuffed Avocado

This stuffed avocado dish is perfect for a quick and easy lunch during the day. Similar to a tuna sandwich, all that needs to be done is to mix healthy canned tuna with plenty of flavorful ingredients and stuff into avocado halves rather than bread. This version uses olives for briny taste along with crisp green celery. For even faster prep, scale up the tuna mixture and when ready for lunch, simply halve and peel an avocado.

Ingredients

¼ cup paleo mayonnaise (Use code TRAILTOHEALTH for 10% off)

3 tablespoons sliced green olives 
1 teaspoon salt

1 avocado   


Directions

1. In a bowl, flake the tuna into small pieces. Fold in the mayonnaise, mustard, green olives, salt and celery until combined.

2. Cut the avocado in half, remove the pit and carefully remove each half from the skin without breaking apart. (Code TRAIL gets you 10% off Nakano Knives) 

3. Divide the tuna mixture between the two halves and serve immediately.
