Tuscan Kale Salad

This simple kale salad is packed with flavors and a perfect side to any grilled meat or fish. Add some avocados if you want to make it extra filling or top it with steak to be a meal on its own. The lemon massaged kale comes to life in your mouth the zesty and herby dressing.

Ingredients

SALAD
2 bunches of Lacinto Kale
2 tablespoons olive oil (use code TRAILTOHEALTH for 10% off)
1 tablespoon lemon
Pecorino cheese to taste

DRESSING
¼ cup olive oil (use code TRAILTOHEALTH for 10% off)
¼ cup lemon juice
1 tablespoon Balanced Bites Greek Seasoning (use link for $10 off)
1 teaspoon garlic powder
1 teaspoon sea salt


Directions

1. De-stem the kale and slice (use code TRAIL for 10% off), into thin pieces and place in a bowl. Combine the olive oil and lemon and pour over the kale and start to massage to soften the kale for a few minutes.

2. Mix together all of the dressing ingredients and toss into the salad.

3. Plate on a large serving dish and using a microplane top with pecorino.
