Soba Noodles with Lemongrass Sesame Dressing

Soba noodles are delicious chilled and this lemongrass sesame bowl is nothing short of amazing. Between the gorgeous bright colors of the food and the tahini sesame dressing that ties it all together your food is both beautiful and delicious.

Ingredients

SALAD
1 package Gluten Free Soba Noodles
1 watermelon radish, thinly sliced
1 avocado, thinly sliced
1 cucumber, halved and thinly sliced
10 snap peas
fresh basil
fresh mint
black and white sesame seeds

DRESSING
3 tablespoons tahini
3 tablespoons lime juice
2 tablespoons sesame oil
1 teaspoon grated fresh ginger
1 teaspoon garlic powder
1 tablespoon tamari
1 teaspoon fish sauce
1 “ stalk of fresh lemongrass
3 tablespoons fresh basil
water as needed


Directions

1. Prepare the soba noodles per the package directions and place them in the refrigerator to cool.

2. While the noodles are cooling, prepare the dressing.

3. Place all ingredients except the water in a food processor and and mix until fully blended.

4. Slowly add water 1 tablespoon at a time and pulse until the desired consistency is reached. It should be pourable. 

5. Once the noodles are cooled, place them in a large bowl and top with cucumber, watermelon radish and avocado.

6. Split the snap peas open lengthwise and place them on the salad and top with the fresh herbs and sesame seeds.

7. Drizzle with dressing and enjoy.
